This is a delicious version of everyone’s favourite fall beverage that will keep you focused, energized, and won’t send your blood-sugar off the rails.
Feel free to adapt it to whatever your coffee set-up is. Instead of espresso, you could brew 2-4 oz of extra strong coffee. We do Nespresso at home, so I usually make 2 regular pods or one lungo pod for a latte and foam the milk in an electric Aeroccino Milk Frother (love it!). You can also substitute organic or grass-fed butter for the cocoa butter and coconut cream in place of whipping cream. Enjoy!
Fat-Fueled Pumpkin Spice Latte
This is a delicious version of everyone's favourite fall beverage that will keep you focused, energized, and won't send your blood-sugar off the rails.
- 2 shots espresso
- 1-3 tsp MCT oil
- 1 tbsp cocoa butter (or grass-fed butter)
- 1/8 tsp pumpkin spice
Blend espresso, MCT oil, cocoa butter and pumpkin spice until the oil is completely emulsified.
Pour into coffee cup.
Combine the almond milk, whipping (or coconut) cream and sugar-free syrups in a stainless steel steaming pitcher or electric milk frother. For a cost effective solution, you could also warm it on the stovetop and froth it with an electric frothing wand.
Once the milk is warmed and foamy, pour over the coffee base.
Sprinkle with cinnamon and enjoy!
