Keto Eggnog Cream Cheese Cookies
Soft and chewy, with hints of cinnamon, nutmeg and rum, these cookies are sure to be a hit at your next holiday party!
- 1/2 cup melted butter
- 1/2 cup Swerve Icing Sugar Sweetener
- 1/2 tsp pure vanilla extract
- extra cinnamon for dusting
Heat oven to 375 degrees and line cookie sheets with silicone baking mats or parchment paper.
Cream butter and cream cheese in mixer bowl. Slowly add sugar and beat until fluffy. Beat in egg, liquid stevia, vanilla and rum.
Add in flour, baking powder, cinnamon, nutmeg and salt. Mix just until incorporated.
Chill dough for at least 1 hour. Use a medium cookie dough scoop (approx. 2 Tbsp) to form even balls and place on cookie sheets. Slightly flatten the dough balls before baking.
Bake for 10 minutes, or until the edges become slightly golden brown. Cool on the cookie sheet until they firm up a bit, then transfer to wire racks to cool completely.
Drizzle with icing and lightly dust with cinnamon.
Beat the butter, Swerve Icing Sugar and vanilla until smooth and creamy. If it becomes too stiff to drizzle, warm in the microwave for 5-10 seconds.
