Pizzeria-Style Fathead Pizza
Keto pizza you can actually pick up with your hands! You can use any of your preferred pre-cooked toppings on this crust - this recipe features bacon, mushroom and spinach (my favourite!).
- 3 cups shredded Italian cheese blend
- 4 oz cream cheese
- 1.5 cups almond flour
- 1 tsp garlic paste
- 1/8 tsp garlic salt
- 2 tbsp tomato paste
- 2 tbsp sugar-free ketchup
- 1/2 tsp italian seasoning
- 4 slices cooked bacon chopped
- 1 cup sliced mushrooms
- 1 cup fresh baby spinach
- 3 cups shredded pizza mozzarella
Place pizza stone or heavy-bottomed pizza pan on the middle rack of your oven and preheat to 450 degrees. Rip off 2 pieces of parchment paper, roughly the size of your pan.
Place shredded cheese and cream cheese in a microwave-safe bowl and cook on high for 60 seconds. Remove, stir with a fork until blended, and put back in microwave for another 60 seconds. Remove, stir with a fork.
Add in the garlic paste and almond flour 1/2 cup at a time and stir well until it's mostly incorporated. Dump it onto a clean countertop and knead in any remaining almond flour. Shape the dough into a round ball then stretch and flatten it to about an inch thick.
Place it on a piece of parchment paper and sprinkle with the garlic salt. Place it directly onto the preheated pan (with the parchment paper). I like to use a large cutting board in the place of a pizza paddle to slide it on and off.
Bake it for 5-8 minutes, until the edges brown and it begins to puff up. When it's finished, leave the pan in and and use the edge of the parchment paper to slide it onto your cutting board.
Mix all ingredients together in a small bowl.
Place your second piece of parchment paper onto the crust and flip it over. You can discard the first sheet. Spread the sauce almost to the edges with a spatula. Evenly distribute the toppings and then top with the shredded pizza mozzarella.
Slide back onto the hot pan in the oven and bake for about 5-8 minutes, or until the cheese begins to brown and bubble. Allow it to cool for about 5 minutes before slicing it. Enjoy!
